Cheesecake Simple

1/2 C sugar
1 (.25 oz) envelope Knox unflavored gelatine
1 C boiling water
2 (8 oz.) packages cream cheese (I used low fat Neufchatel)
1 tsp vanilla
1 ready to use (or homemade) graham cracker crust

Combine sugar and gelatine in bowl. Add boiling water and stir 5 mins or until gelatine is completely dissolved.

Beat cream cheese and vanilla together in a large bowl with a mixer until blended. Gradually beat in gelatine mix. Refrigerate 45 minutes or until thickened, stirring every 15 mins. Pour into crust. Chill 3 hours or until firm. (I just poured it into the shell after mixing and saw no ill effects...)

I never tried with non fat cream cheese but, thought I would try it next with 1 pkg non fat cream cheese and 1 pkg low fat cream cheese. It should be eaten the same day. After it sits in the fridge awhile it gets more gelatine like imho.
